The Iconic Dishes You Must Try

1. Double-Skin Milk (双皮奶) — Shunde's most famous dessert. Buffalo milk is boiled, cooled to form two layers of skin (hence "double-skin"), then steamed with egg white and sugar. The result is a silky custard with a chewy milk-skin top. Best at Renxin Laopu (仁信老铺), open since 1930. Three locations; the original is at 115 Huagai Road. ¥12-18 per bowl. Eat it warm — the skin forms a delicate film that wrinkles when you spoon it.

2. Raw Fish Salad (鱼生) — Shunde's signature dish. A fresh grass carp is filleted and sliced paper-thin (0.5 mm), served with 18 condiments including pickled ginger, sesame, peanut oil, and crispy wonton skins. Each diner mixes their own bowl. The dish traces back to the Song Dynasty when Shunde fishermen ate raw fish from the Pearl River. Best at Kaiyuan Seafood (凯元海鲜), 1 Daliang Jinsha Avenue. ¥68-98 per person.

3. Four-Star Claypot Rice (四星级煲仔饭) — Despite its "four-star" name, this is a humble shop on a residential street. The rice is cooked in individual clay pots over charcoal for exactly 22 minutes. The bottom forms a crispy crust (guoba) that is the sign of mastery. Top with cured sausage (腊味) or chicken with ginger (¥28-45). Located at 19 Shunfeng Community Road. Opens 11:30 AM — arrive by 11:15 AM to beat the 45-minute queue.
